I want to eat more salads, but I find that I resort back to the same salad over and over again - so no wonder I can't seem to get into making more of them! Now that I have explored Show up for Salad by Terry Hope Romero I am enjoying not only the salads, but also making my own dressings and exploring ingredients that are new to me. This book has so much to offer. The cover states that this cookbook will contain 100 more recipes but it feels like SO much more because of all the different options you can use to change things up. In fact I loved the introduction that was called "Choose Your Own Salad Adventure" and that's exactly what you are getting. You choose what and how you combine things to make so many salad creations! You start out learning a lot of salad basics including; 5 kitchen tools for salad seekers, how to "stash that salad" including great advice on storing salad ingredients, advice on making and using dressings, and so much more to get you started on the right track.

Show up for Salads - The Dressings

I thought I was a fan of Ranch dressing, but this book has shown me that I have only hit the tip of what options I have available to me. The dressing section divides the recipes into; hemp dressings, sunflower seed dressings, Tahini-based creamy dressing. Here are some of the options that you can start creating; Creamy Italian Hemp Dressing, Sriracha Cilantro Ranch Dressing (Oh my, if you are a ranch fan, you have to try this one!), Sultry Peanut Coconut Dressing, Carrot Ginger Dressing, Sun-Dried Tomato Dressing, and my new favorite Cucumber Dill Dressing. Even if you have never made your own dressing the easy instructions will have you creating your own favorites in no time.

Salads to Fall in Love With

Now on to the recipes for the salads. I think the names of these recipes will do all the talking. Here are a few of my favorites and my list for the next salads to try; The Juicy Grilled Summer Days Peach Salad, Roasted Ratatouille Salad with Romesco Dressing, Avocado and Black Bean Salad on Cornbread Toast, Thai Peanut Curry with Quick Cucumber Pickles, and Forever Kale Caesar with Cheesy, Crispy Croutons.  

There are so many options, I will be using Show up for Salad a lot this summer as I explore bold new options to expand my food plans. Whether you are looking to eat more veggies, taste what dressings can be like without all the preservatives of store bought options, or looking for cool new recipes to enjoy with friends, this is the cookbook for you to explore!
